Sesame Chicken Soba Salad


Tonight I decided to give in to my taste buds….I made Sesame Soba Noodle Salad!  I really wanted something Asian flavored, but needed to use a few left overs, so I combined a few of my favorites and wall-ah! Yummy dinner!

Sesame Chicken Soba Salad

Sauce:
¼ cup sugar
½ cup water
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons ketchup
1 tablespoon lemon juice (Juice from 1/2 lemon)
1/8 teaspoon sesame oil
1 tablespoon hot mustard
1-2 teaspoon garlic and red chile paste

2 Chicken breasts, cooked & diced
1 Green onion, diced on a diagonal
4-5 stalks celery, diced on a diagonal
½ Cucumber, peeled, de-seeded and diced
1 pkg. soba noodles
1 can water-chestnuts, sliced and diced
Julienne carrots

Boil noodles to 1 minute less than the package, and add carrots at 1 minute less than done.  Mix Sauce items and the dice and add to sauce mixture.
